Abstract |

This paper includes the basic information about the curing process of turmeric. The impact of curing and drying on quality of turmeric has been given in this paper. A literature review on different papers is presented that consist of dependent and independent parameter which has direct effect on final product. An effort is made in this paper to find out the best procedure for curing and drying of turmeric for best quality which is depend on curcumin, oleoresin and essential oil contents in the final product. |
